Unfortunately, my favourite OCR program Abbyy FineReader seems to be discontinued for Mac. The last version was 5.0 (from November 2001!), and it runs only on OS9... See more
For tagged PDFs, there is of course always the option of extracting the text straight from acrobat, but I still find the interface very limited compared to a dedicated OCR program. And it doesn't handle extraction from scanned/flattened PDFs or images.
If you have a recent Mac, I recommend you to use Bootcamp and boot into Windows. If you have an older Mac, maybe run VirtualPC. That way, you can grab the latest FineReader for Windows, it's worth it!
